What matters when shipping Antep pistachios
Pistachios carry a high value per kilo, so ask whether the shipment can be insured and whether a vacuum bag is used, and for small amounts air keeps them crisp by arriving fast.
Roasted, raw and ground
Roasted salted pistachios are for snacking, raw green shelled ones fill baklava and kunafa, and fine ground ones decorate desserts. Antep pistachios are smaller with stronger flavour, so store opened packs airtight away from heat.
Aleppo, shelled and salted pistachios
In-shell pistachios last longer and keep their flavour, while shelled ones are easier to eat and use in sweets but oxidise faster. Salted ones suit snacking, while raw roasted ones suit sweets and give you control of the salt.
The split shell and quality
A partly split shell is a sign of good ripeness, while a closed shell is heavy and hard to open. Pistachios that are discoloured or smell rancid are old, so buy a small amount first from a reliable supplier. To test freshness crack one open: bright, moist green kernel is a sign of quality, while pale dry yellow means long storage. Smaller Aleppo-type nuts are often more intensely flavoured than the cheaper large grades.
The weight of the shell
A kilo of pistachios in the shell does not give a kilo of kernels, since around half is shell that is thrown away, and that changes the cost sum. For snacking the shell is acceptable, while for sweets shelled nuts work out cheaper overall.
